There’s something about the new year that just feels like a cozy, fresh start. A chance to breathe and reset, whether you’ve got a resolution or not.
This year, I want to help you hold onto that cozy feeling and feel empowered in the choices you make. To do that, I’ll be sharing some simple tools and tips that take the stress out of nutrition. No pressure, just little ways to make food feel easier and more comforting because eating shouldn’t be complicated, it should feel good.
Now, if you are ready to start adding some more plants to your plate, I feel we should address some basics. Like, actually stocking up on things you need and making sure any fresh produce you are getting is also not just turning into a science experiment in your fridge. It’s not just any grocery guide either. I made to address a lot of pain points I often hear from people when it comes to shopping. So you’ll find a detailed list of things to consider stocking up on, ways to keep your produce longer, and ways to properly shop for specific meals you love.
I also included a nifty planner at the end that helps take some of the anxiety away from meal decision making. I can pick between 3 things I love and know how to make, which then makes the task of picking something less stressful when you are asked the dreaded question, “what do you want for dinner?” Really hoping this guide is helpful and resonates with you!
Let’s focus on some nourishing recipes that are quick and easy. And if you use some of the following advice for each recipe, you can truly help save some time and headache when prepping.
High Protein Breakfast Crumble - If you want something fun that isn’t your typical overnight oats or chia pudding, I really love this option. Best part, you can batch prep a bunch and reheat through the week.
Use frozen fruit. It’s already cleaned and trimmed, so all you have to do is get right into the recipe. Frozen fruit is picked at the peak of ripeness, so you are definitely getting the nutrition in, plus you don’t have to worry about it going bad!
Sticky Lemon Chickpea Pita Wrap - Even now, this is the recipe I come back to over and over again. The sauce is super simple, and everything comes together in just one pan.
Drain and rinse in advance. If you know you want to make this dish during the week. Drain, rinse, pat dry your chickpeas really well then place in a paper towel lined airtight container. Then you don’t have to do that step when you want to make this recipe.
Prep the sauce. The sauce honestly doesn’t take long to make, but if you want to get ahead, just add the ingredients in the 1st step of the recipe to a small jar and store in the fridge until ready to use.
Easy Baked Peanut Tofu - The oven does the cooking for you then you just coat it in your homemade peanut sauce before serving. Prep these things ahead of the week to make this recipe effortless:
Batch cook some rice. I like to cook a ton of rice on Sunday, so I don’t have to do it later in the week when I’m less motivated. Tip, if you’re worried it will go bad, portion your rice into single servings and freeze.
Press your tofu in advance or use super firm tofu (already pressed tofu). If using extra firm tofu, press it while you prep your rice for the week. Cube it and place in an airtight container so it is ready to go.
Be lazy. Honestly, I tend to choose veggies that aren’t a fuss when making meals. Often, I’ll serve something like this with Persian cucumbers or mini bell peppers. You can chop or if you’re lazy, just enjoy them on the side whole. They’re small enough where I don’t mind.
